Roast veg tray bake

One tray, whatever is in the crisper, and a shake that ties it all together.
The trick with mixed veg is cutting for time, not for looks. Pumpkin in big pieces, zucchini in chunks, onion in wedges, so everything finishes together instead of half of it turning to mush.

What you need
- 1/4 pumpkin, cut into large wedges
- 3 carrots, halved lengthways
- 2 red onions, in wedges
- 2 zucchini, in thick chunks
- 3 tablespoons olive oil
- Chik Chik Boom Herb
How it goes
- Heat the oven to 200C.
- Cut the harder vegetables larger and the softer ones smaller, so they all finish at once.
- Toss everything with the oil on the biggest tray you own. One layer, no overlapping. Use two trays if you have to.
- Roast 35 to 45 minutes, turning once, until the edges caramelise.
- Shake the Herb over the lot while it is hot and toss on the tray.
From behind the counter
If it will not fit in one layer, it will not caramelise. Two trays beats one crowded one every time.
